Our recipe for homemade strawberry and vanilla jam

The best strawberries are those you pick yourself straight from a strawberry field. The great thing about homemade jam is that it keeps for a very long time. So you can still enjoy the good fruit and its vitamins months after the season.

What's more, when you cook it yourself, you can adjust the amount of sugar to suit your taste. The process is extremely simple and means you can enjoy summer and spring fruit all year round. Marmalade in a pretty glass jar is ideal for a healthy breakfast, but it's also a great gift to give to loved ones.

Ingredients

For approximately 4 x 250ml canning jars or 2 x 500ml jam jars

  • 1 kg fruit, washed and chopped
  • 350 g Gelling sugar
  • ca. 50 g Vanilla paste

Preparation:


Clean the glass jars, lids and seals in boiling water to eliminate all germs and bacteria.

Wash the fruit and cut into small pieces. Mix the fruit pieces in a saucepan with the jelly sugar and bring the mixture to the boil. Boil for at least 3 minutes on the highest setting.

Flavour with vanilla paste. If you prefer a touch of acidity, replace the vanilla paste with fresh lemon juice or basil.

Remove the pan from the heat and purée the fruit as desired.

Then carry out a gelling test: Place 1-2 teaspoons of the hot fruit mixture on a small plate. If the mass becomes thick or solid, the jam is ready.

Immediately pour the hot strawberry jam into the jars you have prepared. Clean the rims of the jars well. (Otherwise the seal of the jam jar or the lid may not close completely tightly).

Always check that the screw lids are well sealed and tight to make sure they are airtight. Then close the lids and turn each glass upside down. After about 30 minutes, turn the jars upside down and store the jam in a dark place. Then enjoy your jam for breakfast.
